I wanted to share my favourite Simple Cupcake Recipe which I make at my parent’s place in Brisbane all the time! I love to bake when I’m up there as they have a bigger kitchen in their house compared to the kitchen in my teeny tiny studio apartment in Sydney.
To make these cupcakes you will simply need:
- 2 cups of self-raising flour
- 3/4 cup of sugar
- 1/2 cup of milk
- 3 eggs
- 125 g margarine or butter
- 1/2 teaspoon of vanilla essence
First, turn the oven on to 180 degrees and set out approx 33 paper patty cases. If you only have one tray you can always make a couple of batches. Next sift the flour and sugar into a mixing bowl.
Mix it all together with a beater until it is smooth and creamy looking. Don’t forget to lick the mixture off the beaters!
Spoon the mixture into the paper patty cases until it is about 3/4 full.
Pop them in the oven for 15 minutes.
After cooling them on a wire rack, sprinkle some icing sugar on top (I was too lazy to make icing!).
Have them with a cup of tea and enjoy!
