I was only recently introduced to ‘Ginger Kisses’ (or ‘GKs’) by my boyfriend who buys them on a regular basis from the supermarket. They are simply two soft and puffy ginger biscuits held together by a layer of delicious vanilla cream.
So I decided to make some for us using this brilliant, tried-and-tested recipe. The first attempt was successful and a couple of days later, the GKs were even softer and tastier than before. The second attempt was not as successful as I left the biscuits in the oven for a tad too long. Remember to take them out of the oven quickly so that the GKs are soft and almost sponge-like.
